Vinification
Soft pressing of the whole grapes. Temperature-controlled fermentation with indigenous yeasts in oak barrels. Aging 12 months in 70% oak barrels and 30% in concrete vats and once assembled it remains 8 months in concrete vats and 12 months in bottle.
Tasting notes
Straw yellow color with golden reflections. The nose is enveloping with notes of apricot, well harmonized with the balsamic component due to the balanced aging in wood. On the palate it shows great structure, supported by a vibrant and lively acidity. Suitable for a long aging.
Pairings
Tagliolini with saffron, baked fish, Vernaccia-style rabbit.
